Easter Bunny Cupcakes
Yesterday I posted those adorable Peek-a-Boo Peeps Easter Cupcakes. Well, today I have another super cute Easter cupcake recipe for you – and this one is bunny themed as well!
These Easter Bunny Cupcakes might just be the cutest darn cupcakes I have ever seen. Now you will need to stock up on candy to make these babies as the bunnies are made out of Reese’s Peanut Butter Cups, Whoppers, Tootsie Rolls, and Sweet Tarts. Holy candy overload! 😉 Below I have the recipe lists and instructions for the cupcakes, the frosting, and building the bunny. If you would like to take a short cut, you can totally use boxed chocolate cake mix to make the cupcakes. Your call.
Candy/Supplies needed to decorate:
Piping bag with round tip
Reese’s Peanut Butter Cups
Sweet Tarts Chewy Candy
Black decorating gel tube
White decorating gel tube (Alternatively, you can skip the white decorating gel and purchase ready made eyes instead)
Chocolate Cupcake Ingredients:
1 cup flour
3/4 tsp baking soda
1/2 tsp sea salt
1/4 tsp baking powder
1/3 cup cocoa
1/2 cup unsalted sweet cream butter softened
3/4 cup granulated sugar
1/2 tbsp pure vanilla
1 cup whole milk
Chocolate Frosting Ingredients:
1/2 cup unsalted sweet cream butter
3 cups powder sugar
1/2 cups cocoa
3 tbsp heavy whipping cream
Preheat oven to 350 degrees
Line cupcake pan with paper liners
Using a medium bowl, mix together the dry ingredients. Set aside.
In another mixing bowl, cream butter and sugar for 2 minutes
Add in the vanilla and egg until well mixed
On low gradually mix in the dry ingredients with the wet and mix until combined.
Add in milk and mix
Evenly distribute the batter into the cupcake liners
Bake for 21-24 minutes
In a large mixing bowl with whisk attachment, add in all ingredients and mix until combined.
If “rocks” appear add in another tablespoon of heavy whipping cream.
When you have stiff peaks, stop mixing
Building the Bunny:
Add frosting to round tip piping bag and frost cupcakes.
Using the white decorating gel, draw a dot for the base of each eye.
Using the black decorating gel, draw on a small black dot for the pupal.
Using the white decorating gel again, pipe on a tiny white dot in the center of the pupil.
Use black decorating gel to attach Sweet Tart Candy as the nose.
Using black decorating gel, draw whiskers and a smile (eyebrows are optional).
Set Reese’s Peanut Butter Cup bunny face aside for decorating gel to dry.
Place Whoppers into the frosting.
Once the Reese’s Peanut Butter Cups bunny face is dried, place onto cupcake.
Unwrap tootsie rolls and flatten using a rolling pin. Cut out bunny ears.
Place the ears into the freezer for 5 minutes.
Melt chocolate in microwave (heat for 1 minute, stir, heat additionally in 15 sec increments stirring in between, until completely melted)
Remove ears from freezer.
Bend ears into desired shape.
Dip ears into the melted chocolate. Place ears on top of the Reese’s Peanut Butter Cups.
